Prepare the special sauce: In a small bowl, combine the mayonnaise, ketchup, yellow mustard, dill pickle relish, garlic powder, onion powder, and paprika. Stir well until thoroughly combined. Set aside.

Divide the ground beef into 8 equal portions (about 2 ounces each). Season each portion with a pinch of salt and pepper.

Heat 1 tablespoon of vegetable oil in a large non-stick skillet or griddle over medium-high heat. Once hot, place 4 of the mini flour tortillas in the skillet.

Immediately place one seasoned beef portion onto each tortilla. Using a sturdy spatula or a burger press, firmly smash the beef onto the tortilla, spreading it out to the edges. Cook for 2-3 minutes, until the beef is browned and crispy on the bottom.

Flip each smaco. Immediately sprinkle about 1/2 ounce of shredded cheddar cheese over the cooked beef side of each smaco. Cook for another 1-2 minutes, or until the cheese is melted and bubbly and the tortilla is lightly golden and crispy.

Transfer the cooked smacos to a plate. Repeat steps 3-5 with the remaining vegetable oil, tortillas, beef, and cheese.

To assemble each Cheeseburger Smaco, spread a generous amount of the special sauce onto the cheesy side of the cooked smaco. Top with shredded lettuce, diced red onion, and dill pickle slices.

Serve immediately and enjoy your delicious Cheeseburger Smacos!
