Cut off both ends of the green plantains. Score the skin lengthwise down one side. Carefully peel the skin off the plantain. Cut each peeled plantain into 1-inch thick pieces.

Heat enough oil in a pan over medium-high heat to submerge the plantain pieces. Fry the plantain pieces until they are golden yellow on all sides, but not brown or crispy. They should be soft enough to smash. Remove the plantains from the oil and place them on a paper towel-lined plate to drain.

In a bowl, combine 2 cups water, 1 tablespoon garlic powder, and 1 teaspoon salt. Mix well.

Use a tostonera (plantain press) or the bottom of a glass to flatten each plantain piece into a disc approximately 1/4 inch thick. Dip each smashed plantain disc into the prepared garlic water mixture, ensuring they are fully submerged and coated.

Return the soaked, smashed plantain discs to the hot oil. Fry them until they are golden brown and crispy. Remove the crispy tostones from the oil and place them on a paper towel-lined plate to drain excess oil. Immediately season them with salt to taste.

In a separate pan, heat 1/2 cup olive oil over medium-low heat. Add the 6-8 finely minced garlic cloves and sauté them until they are fragrant and lightly golden, being careful not to burn them.

Remove the pan from the heat. Add 1/2 teaspoon cumin and 1/2 teaspoon oregano to the garlic-infused oil. Stir to combine. Squeeze the juice of 1 lime into the mixture. Stir well. Add salt and pepper to taste, and mix thoroughly.

Serve the freshly fried tostones immediately with the garlic mojo sauce for dipping.
