Rinse the organic brown rice thoroughly under cold water. Combine the rinsed rice and 2 cups of water in a medium saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 40-45 minutes, or until all water is absorbed and rice is tender. Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork.

While the rice is cooking, prepare the Ginger-Sesame Dressing. In a small bowl, whisk together the organic tamari, organic apple cider vinegar, organic sesame oil, grated organic ginger, minced organic garlic, reserved kimchi juice, and organic chili flakes until well combined.

Heat the organic ghee in a large non-stick skillet over medium heat. Crack the pasture-raised eggs into the skillet, being careful not to break the yolks. Cook for 2-3 minutes for sunny-side up eggs, or longer if you prefer a firmer yolk. Season with a pinch of sea salt and freshly ground black pepper.

To assemble the bowls, divide the cooked organic brown rice among 4 serving bowls. Top each with a generous portion of fresh organic spinach, organic kimchi, and sliced organic avocado.

Carefully place one fried pasture-raised egg on top of each bowl. Drizzle generously with the Ginger-Sesame Dressing. Garnish with toasted organic sesame seeds and thinly sliced organic scallions.
