Bring a pot of water to a rolling boil. Add the penne pasta and cook according to package directions until al dente.

While the pasta is cooking, finely chop the red onion. If using, mince the garlic cloves.

In a large pan, melt the butter (if using) over medium heat. Add the chopped red onion and sauté until softened, about 3-5 minutes. Add the minced garlic (if using) and cook for another minute until fragrant.

Add the sliced mushrooms to the pan with the onion and garlic. Sauté until the mushrooms are tender and have released their moisture, about 5-7 minutes.

Pour the double or single cream into the pan with the vegetables. Stir well to combine.

Add the cajun seasoning, salt, mixed herbs, chilli flakes, paprika, and garlic powder to the cream mixture. Stir all ingredients together until the spices are evenly distributed and the sauce is well combined and heated through.

Drain the cooked penne pasta. Add the drained pasta directly into the pan with the creamy mushroom sauce. Toss everything together until the pasta is thoroughly coated in the sauce.

If desired, stir in the optional cheddar cheese until melted and incorporated into the pasta.

Serve the creamy mushroom pasta hot.
