Place the fresh ginger, 3 cloves garlic, some spring onion (from the 2 spring onions), and a handful of coriander into a food processor. Blend thoroughly until finely chopped.

Add approximately half of the 500 grams of raw prawns to the food processor with the blended aromatics and blend again until processed. Roughly chop the remaining half of the prawns with a knife and add them to the food processor mixture.

Add 1 tablespoon of cornstarch, 1 tablespoon of sesame oil, and 1 tablespoon of soy sauce to the prawn mixture in the food processor. Mix all ingredients for the filling together until well combined.

In a small bowl, mix 2 teaspoons of cornstarch with a small amount of water to create a slurry for sealing the wontons.

Take one wonton wrapper. Apply the cornstarch-water mixture along one edge of the wrapper. Place a long piece of the prepared prawn filling onto the wrapper. Add as much filling as desired, but ensure not to overfill.

Fold and seal the wonton wrapper around the filling to create a long, noodle-like shape. Aim for consistent sizes to ensure even cooking.

Bring a pot of water to a rolling boil. Carefully drop the assembled wonton noodles into the boiling water. Cook them until they float to the top, indicating they are cooked through.

Remove the cooked wontons from the boiling water using a strainer and place them in a serving bowl.

Drizzle 1 tablespoon of chili oil over the cooked wontons. Then, add 1 tablespoon of soy sauce, 1 tablespoon of sesame oil, and 1 tablespoon of sweet soy sauce.

Garnish with some chopped spring onion.

Serve immediately and enjoy your Wonton Noodles!
