While the poppers are baking, prepare the cheese sauce. In a small saucepan, melt 2 tablespoons of unsalted butter over medium heat.

Once the butter is melted, add 2 tablespoons of all-purpose flour and whisk continuously for 1 minute to create a roux.

Gradually whisk in 1 cup of milk, ensuring no lumps form. Continue whisking until the sauce begins to thicken, about 3-5 minutes.

Remove the saucepan from the heat. Add 1 cup of shredded cheddar cheese to the sauce. Whisk until the cheese is completely melted and the sauce is smooth. Stir in 1/2 teaspoon of hot sauce and 1/2 teaspoon of seafood seasoning to taste. Mix well.

Once the pretzel poppers are baked, remove them from the oven. Pour the warm cheese sauce over the poppers and serve immediately.
