In a heavy-bottomed saucepan, combine the honey, lemon juice, cayenne pepper, cinnamon, turmeric, black pepper, and ginger powder. Stir well to ensure all spices are evenly distributed.

Place the saucepan over medium-high heat. Stir the mixture frequently to prevent it from burning or sticking to the bottom of the pan. Monitor the temperature using an infrared or candy thermometer.

Continue heating and stirring until the mixture reaches a temperature of a little over 300°F (hard crack stage). This typically takes about 15-20 minutes of active cooking.

Once the desired temperature is reached, immediately remove the pan from the heat and allow the mixture to cool slightly for a few minutes. This helps prevent excessive bubbling when pouring.

Carefully and quickly pour the still-hot liquid into silicone candy molds. If making lollipops, place lollipop sticks into the molds before pouring. Work swiftly as the mixture will begin to harden.

Allow the lozenges and lollipops to cool and harden completely in the molds at room temperature. This can take anywhere from 30 to 60 minutes, depending on your environment.

Once fully hardened, carefully pop the lozenges and lollipops out of their silicone molds.

For storage, wrap individual lozenges in small pieces of parchment paper to prevent them from sticking together.

Store the wrapped lozenges and lollipops in an airtight container, such as a mason jar, in the refrigerator or a cool, dark place to maintain freshness and prevent melting.
