In a medium-sized bowl, combine the minced chicken, finely chopped onion, fresh coriander, grated ginger, garlic powder (or minced garlic), salt, black pepper, light soy sauce, and paprika (or chili flakes). Mix thoroughly until all ingredients are well combined. If the mixture appears too dry to hold its shape, add the optional egg and mix again.

Prepare your workspace for rolling. Fill a shallow dish or pie plate with water. Take one sheet of rice paper and dunk it into the water for about 15 seconds, or until it becomes soft and pliable.

Carefully lay the softened rice paper flat on a clean surface. Place approximately 1 to 1 1/2 tablespoons of the chicken mixture in the middle of the bottom edge of the rice paper, forming a small log shape.

Fold the bottom edge of the rice paper over the filling, then fold in the sides. Tightly roll the rice paper upwards to create a spring roll shape. Repeat this process with the remaining rice paper sheets and chicken filling.

Using a sharp knife, cut each rolled spring roll into 3-4 bite-sized pieces.

Preheat your air fryer to 180°C for 5 minutes.

Once preheated, carefully place the chicken bites in a single layer in the air fryer basket, ensuring not to overcrowd it. You may need to cook in batches. Spray the bites generously with cooking oil spray.

Air fry the chicken bites at 180°C to 190°C for 15-20 minutes, flipping them halfway through, until they are golden brown and crispy, and the chicken is cooked through.

Remove the crispy chicken bites from the air fryer. Drizzle with chilli oil or hot sauce, if desired, and serve immediately. Enjoy!
