Crack the large eggs into a microwave-safe bowl. Add the water, sesame oil, and soy sauce. Using a fork, whisk the mixture thoroughly until well combined and slightly frothy.

Gently spoon the drained soft tofu into the egg mixture. Arrange the peeled and deveined shrimp evenly on top of the tofu and egg mixture.
