In a large bowl, combine the ground lean pork, minced garlic, minced ginger, minced red onion, 1/4 cup of sliced green onions, 1/2 cup of sliced basil, 1 tablespoon of soy sauce, and 1 tablespoon of hoisin sauce. Mix thoroughly by hand until all ingredients are well combined.

Take small portions of the pork mixture (about 2 tablespoons per tortilla) and press them down very thin and flat onto one side of each small flour tortilla, ensuring an even layer that covers most of the tortilla surface.

Heat a large non-stick pan or griddle over medium-high heat. Add a small amount of cooking oil to coat the bottom of the pan.

Once the pan is hot, carefully place the tortillas, meat-side down, into the pan. Cook for approximately 3 to 4 minutes, or until the pork is fully cooked through and has a nice sear.

Flip the tortillas and cook on the tortilla side for another 2 to 3 minutes, or until the tortilla is golden brown and slightly crispy. Repeat with the remaining tortillas, adding more oil as needed.

Transfer the cooked Smash Dumpling Tacos to a serving plate. Drizzle generously with spicy mayo and additional hoisin sauce. Top with julienned carrots, the remaining sliced green onions, fresh cilantro sprigs, and a sprinkle of sesame seeds. Serve immediately.
