Preheat your oven to 300°F. Lightly grease a 12-cup muffin tin with cooking spray.

In a blender, combine the 5 whole eggs, 1 cup egg whites, 1 1/2 cups cottage cheese, 1 1/2 cups shredded Gruyère cheese, 1 1/2 tablespoons corn starch, a large pinch of salt, and a large pinch of black pepper.

Blend the mixture on low speed for 1 to 2 minutes, or until completely smooth and well combined.

Cook the 4 strips of beef bacon in a skillet until crispy. Once cooked, transfer to a paper towel-lined plate to drain excess fat, then chop into desired small chunks.

Evenly sprinkle the chopped beef bacon into the bottom of each greased muffin cup.

Carefully pour the blended egg mixture over the bacon in each muffin cup, filling them about three-quarters full.

Place the filled muffin tin into a larger baking dish. Pour about 1/2 inch of hot water into the larger baking dish, creating a shallow water bath around the muffin tin.

Carefully transfer the baking dish with the water bath and muffin tin to the preheated oven. Bake for 30 minutes, or until the egg bites are set and lightly golden.

Remove from the oven and carefully lift the muffin tin out of the water bath. Let cool for a few minutes before removing the egg bites from the tin. Serve immediately, or allow to cool completely before storing or freezing for later.
