In a large bowl, combine the chicken thighs, minced lemongrass, minced garlic, minced shallot, fish sauce, soy sauce, granulated sugar, honey, black pepper, and 1 tablespoon of vegetable oil. Mix well to ensure all chicken pieces are evenly coated.

Cover the bowl and refrigerate for at least 1 hour, or preferably 4 hours, to allow the flavors to meld. If time permits, marinating overnight will yield the best results.

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Once the oil is shimmering, add the marinated chicken in a single layer, working in batches if necessary to avoid overcrowding the pan. Overcrowding will steam the chicken instead of searing it.
