In a large bowl, mash the rinsed and drained black beans with a fork or potato masher until mostly smooth but still with some texture.

In a medium skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced red bell pepper, yellow onion, and minced garlic. Sauté for 5-7 minutes, or until softened and fragrant.

Add the sautéed vegetables to the mashed black beans. Stir in the rolled oats, cumin, chili powder, smoked paprika, salt, and black pepper. Mix well to combine.

Gradually add the bread crumbs, mixing until the mixture holds together. If the mixture is too wet, add a little more bread crumbs. If it's too dry, add a teaspoon of water.

Divide the mixture into 4 equal portions and form them into patties, about 3/4 inch thick.

Heat the remaining 1 tablespoon of olive oil in a large skillet over medium heat. Cook the black bean burgers for 5-7 minutes per side, or until golden brown and heated through.

While the burgers are cooking, toast the Bread Srsly Sourdough Dinner Rolls.

Assemble the burgers: Spread vegan mayonnaise on the toasted buns. Layer with lettuce, a black bean patty, tomato slices, avocado slices, and red onion.
