Prepare the black bean burgers: In a large bowl, mash the rinsed and drained Trader Joe's Black Beans with a fork or potato masher until mostly smooth but still with some texture.

Add the diced red onion, chopped cilantro, lime juice, bread crumbs, beaten egg, cumin, chili powder, salt, and black pepper to the mashed black beans. Mix well until everything is combined.

Divide the mixture into 4 equal portions and form them into patties, about 1-inch thick.

Prepare the Sriracha Mayo Slaw: In a separate medium bowl, whisk together the mayonnaise, sriracha, honey, lime juice, salt, and black pepper until smooth.

Add the Trader Joe's Organic Coleslaw Mix to the dressing and toss gently to coat. Set aside.

Cook the black bean burgers: Heat olive oil in a large skillet over medium heat. Once hot, carefully place the black bean patties in the skillet.

Cook for 5-7 minutes per side, or until golden brown and heated through.

Assemble the burgers: Toast the Trader Joe's Brioche Buns. Place a cooked black bean burger on the bottom half of each bun. Top with a generous spoonful of Sriracha Mayo Slaw and a few slices of avocado. Cover with the top bun and serve immediately.
