Add the peeled and diced apples and water to a pot.

Cook the apples for 10–15 minutes over medium heat until they are very soft and easily mashed.

Carefully transfer the cooked apple mixture to a blender or use an immersion blender and blend until completely smooth. Ensure there are no lumps.

Stir the gelatin (or agar-agar powder if making the vegan option) into the warm apple puree until fully dissolved. Allow the mixture to cool down to room temperature. This is crucial before whipping.

Once the mixture has cooled, transfer it to a large mixing bowl. Using an electric mixer, whip the mixture on high speed for about 20 minutes. The mixture will become light, fluffy, and significantly increase in volume, turning pale in color.

Line a container or mold (approximately 20x20 cm or similar size) with parchment paper, leaving an overhang on the sides for easy removal. Pour the whipped marshmallow mixture into the prepared container, spreading it evenly with a spatula.

Refrigerate the marshmallow mixture for 2–3 hours, or until it is completely set and firm to the touch.

Once set, remove the marshmallow slab from the mold using the parchment paper overhang. Place it on a cutting board and cut it into desired pieces using a sharp, lightly oiled knife or a pizza cutter. Enjoy your homemade apple marshmallows!
