Prepare the enoki mushrooms by cutting off the root base. Then, slice the remaining mushrooms in half and gently tear them into small clusters.

In a medium bowl (Bowl 1), combine 160g plain flour, 2 teaspoons garlic powder, 2 teaspoons smoked paprika, 1 teaspoon black pepper, and 1 teaspoon salt. Mix well to create the seasoned flour.

In another medium bowl (Bowl 2), whisk together 120g plain flour, 220ml water, and 1 tablespoon hot sauce until smooth. The batter should be slightly thick.

Take each enoki mushroom cluster and first toss it thoroughly in the seasoned flour (Bowl 1). Then, dip it into the batter (Bowl 2), ensuring it's fully coated. Finally, return it to the seasoned flour, pressing lightly to encourage a shaggy texture.

Preheat your air fryer to 200°C (390°F). Lightly spray the air fryer basket with oil spray.

Place the coated enoki mushroom clusters in a single layer in the preheated air fryer basket, making sure not to overcrowd it. Spray the tops of the mushrooms lightly with oil spray.

Air fry for 8-10 minutes total. Halfway through the cooking time (after 4-5 minutes), flip the mushrooms and spray again lightly with oil if needed. The mushrooms should come out golden, crispy, and slightly shaggy.

While the mushrooms are air frying, prepare the hot honey garlic sauce. In a small pan, melt 4 tablespoons of vegan butter over medium heat.

Add the 3 cloves of minced garlic to the melted butter and cook for 30-60 seconds until fragrant, being careful not to burn it.

Stir in 2 tablespoons of maple syrup, 1 tablespoon of soy sauce, and 1 teaspoon of chilli flakes. Bring the sauce to a gentle simmer and cook for 1-2 minutes until it thickens slightly and becomes glossy.

Once the enoki mushrooms are cooked, either brush them generously with the hot honey garlic sauce or toss them gently in a bowl with the sauce until evenly coated. Serve immediately and enjoy!
