Prepare the chicken by cutting 1 1/2 pounds of boneless, skinless chicken thigh into uniform bite-sized pieces. Set aside in a large mixing bowl.

Finely mince 2 stalks of lemongrass, 1 shallot, and 5 to 6 cloves of garlic. Add these aromatics to the bowl with the chicken.

To the chicken and aromatics, add 2 tablespoons of granulated sugar, 2 tablespoons of fish sauce, 1 tablespoon of soy sauce, 1 tablespoon of oyster sauce, and 1 teaspoon of black pepper.

Mix all the ingredients thoroughly with your hands or a spoon until the chicken pieces are well coated with the marinade. Cover the bowl and marinate the chicken for at least 30 minutes at room temperature, or ideally overnight in the refrigerator for the best flavor.

Heat 1 tablespoon of cooking oil in a large pan or skillet over medium-high heat. Once the oil is hot and shimmering, add the marinated chicken in a single layer, being careful not to overcrowd the pan. You may need to cook the chicken in batches.

Cook the chicken for 3 to 5 minutes until it is nicely browned on one side. Then, flip the pieces and cook for another 3 to 5 minutes until browned on the other side.

Continue cooking, stirring occasionally, for an additional 5 to 7 minutes, or until the chicken is fully cooked through, tender, and has developed a delicious caramelized coating. The sauce should reduce and cling to the chicken.

Serve the Vietnamese lemongrass chicken hot with a side of freshly cooked rice and a fried egg. Add hot sauce, if desired, to taste.
