Preheat your oven to 350°F. Line a muffin pan with muffin liners.

In a small bowl, combine the 1/4 cup brown sugar and 2 teaspoons of cinnamon for the cinnamon sugar swirl. Set aside.

In a separate bowl, toss the peeled and rough chopped apples with 2 tablespoons of granulated sugar and the remaining 1 teaspoon of cinnamon. Set aside.

In a stand mixer fitted with the paddle attachment, or using a hand mixer, beat the 1/2 cup softened butter and 2/3 cup granulated sugar together until light and fluffy, which should take approximately 2 minutes. Add the eggs one at a time, mixing well after each addition, then mix in the vanilla extract.

In a separate medium bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the wet butter mixture, mixing on low speed until just combined. Do not overmix. Stir in the 1/2 cup milk until the batter is smooth.

Spoon about 2 tablespoons of muffin batter into the bottom of each prepared muffin liner. Evenly distribute about 1 tablespoon of the apple mixture over the batter in each cup. Sprinkle about 1 tablespoon of the brown sugar and cinnamon mixture over the apples.

Add another tablespoon of muffin batter over the apple and cinnamon sugar layer in each cup. Top with another tablespoon of the apple mixture and a final sprinkle of the brown sugar and cinnamon mixture. Use a knife or toothpick to gently swirl the apple and cinnamon sugar into the top layer of batter, ensuring the apples are slightly pressed into the batter.

Bake for 40 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Allow the muffins to cool in the muffin pan for 5 minutes before transferring them to a wire rack to cool completely.

While the muffins are cooling, prepare the icing. In a small bowl, whisk together the 1 cup powdered sugar and 3 tablespoons of milk until smooth. If the glaze is too thick, add more milk 1/2 teaspoon at a time until desired consistency is reached. If it's too thin, add more powdered sugar.

Once the muffins have cooled, drizzle generously with the prepared glaze. Serve and enjoy!
