Heat the vegetable oil in a large pot or Dutch oven over medium heat.

Add the chopped onion to the pot and cook, stirring occasionally, until softened, about 3-4 minutes.

Stir in the chopped carrots and chopped potatoes. Cook for another 2-3 minutes.

Add the ground beef to the pot. Cook, breaking it up with a spoon, until it is browned and no longer pink, about 5-7 minutes.

Carefully drain any excess fat from the pot.

Pour in the water and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and simmer for 10 minutes, or until the vegetables are tender.

Turn off the heat. Add the Japanese curry cubes to the pot and stir continuously until they are completely dissolved and the sauce is smooth.

Turn the heat back on to low and continue to simmer the curry, stirring occasionally, until it has thickened to your desired consistency, about 3-5 minutes.
