Bring a medium pot of water to a rolling boil. Add the sago pearls and cook according to package directions, typically 15-20 minutes, stirring occasionally, until the pearls are translucent with no white centers. If the pearls still have white centers, turn off the heat, cover the pot, and let them sit for 5-10 minutes until fully translucent.

Once cooked, drain the sago pearls in a fine-mesh sieve and rinse thoroughly with cold water to remove excess starch and prevent sticking. Set aside.

Take approximately 2/3 of the ripe mango flesh and place it into a blender. Add the 1 cup of milk and 1/4 cup of condensed milk to the blender. Blend until the mixture is completely smooth and creamy. Taste and add more condensed milk if a sweeter mixture is desired.

Dice the remaining 1/3 of the mango flesh into small, bite-sized cubes.

In a large bowl, combine the cooked and rinsed sago pearls with the blended mango mixture. Add the diced mango cubes.

Gently mix all the ingredients thoroughly until well combined. Serve immediately in individual cups or chill for at least 30 minutes for a refreshing cold dessert.
