Preheat your oven to 375°F. Arrange the baguette slices in a single layer on a baking sheet. Brush both sides of each slice with olive oil and sprinkle lightly with salt.

Bake the baguette slices for 8-12 minutes, or until golden brown and crispy. Keep a close eye on them to prevent burning. Once toasted, remove from the oven and set aside to cool.

While the crostini are cooling, prepare the whipped feta. In a food processor, combine the crumbled feta cheese, softened cream cheese, minced garlic, lemon juice, black pepper, and 1 tablespoon of olive oil.

Process the mixture until it is completely smooth and creamy, scraping down the sides of the bowl as needed. This may take 2-3 minutes. Taste and adjust seasoning if necessary.
