Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.

In a large bowl, combine the zucchini, bell pepper, red onion, cherry tomatoes, and minced garlic. Drizzle with 2 tablespoons of olive oil, sprinkle with dried oregano, salt, and black pepper. Toss gently to ensure all vegetables are evenly coated.

Spread the seasoned vegetables in a single layer on the prepared baking sheet. Roast in the preheated oven for 20-25 minutes, or until the vegetables are tender and slightly caramelized. Stir halfway through cooking.

While the vegetables are roasting, bring a large pot of salted water to a rolling boil. Add the pasta and cook according to package directions until al dente. Reserve 1/2 cup of the pasta cooking water before draining.

Once the pasta is drained, return it to the pot. Add 1 tablespoon of olive oil, the roasted vegetables, grated Parmesan cheese, and red pepper flakes (if using). Toss to combine.

If the pasta seems a bit dry, add a splash or two of the reserved pasta cooking water, stirring until a light sauce forms and coats the pasta. Taste and adjust seasoning if necessary.

Serve immediately, garnished with fresh chopped basil and extra grated Parmesan cheese, if desired.
