In a large bowl, whisk together the protein powder, flour, baking powder, and salt.
In another bowl, mix the milk, beaten egg, vanilla extract, and melted butter until well combined.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
Heat a non-stick skillet over medium heat. Pour 1/4 cup of batter onto the skillet for each mini pancake.
Cook pancakes for 2-3 minutes on each side or until golden brown. Repeat with remaining batter.
Serve the pancakes warm with mixed berries on top and maple syrup on the side.
