Peel and finely mince the garlic. Set aside.

Trim the ends off the green beans.

Heat a wok over high heat until it is very hot, about 2-3 minutes. Add 1 1/2 cups of vegetable oil to the hot wok.

Once the oil is shimmering and very hot (around 350-375°F), carefully add the trimmed green beans to the hot oil. Fry the green beans for 1 minute, stirring occasionally.

Using a perforated scoop or spider strainer, carefully drain the green beans from the oil and transfer them to a bowl. Set aside. Carefully pour out all but 1 tablespoon of oil from the wok.

Add the minced garlic to the wok with the remaining 1 tablespoon of oil. Stir-fry the garlic for about 30 seconds until fragrant, being careful not to burn it.

Add the previously fried green beans back into the wok with the garlic. Stir-fry the green beans and garlic together for another 30 seconds.

Add salt and MSG (if using) to taste. Stir-fry briefly to combine all ingredients.

Transfer the cooked garlic green beans to a serving platter and serve immediately.
