Preheat your oven to 180 degrees Fan. Line a baking tin with parchment paper.

In a large bowl, add the 2 medium eggs, 140 grams of granulated sugar, 1 tablespoon of honey, and 2 teaspoons of vanilla extract. Grate the zest of 1 lemon directly into the bowl.

Whisk the mixture well until it becomes thicker and creamier.

Add the 60 grams of softened butter and 200 grams of fresh ricotta to the bowl.

Whisk all ingredients again until the butter and ricotta are well incorporated and smooth.

Sieve in the 18 grams of baking powder and 220 grams of 00 flour into the wet ingredients.

Whisk the flour into the mixture until just combined. Use a spatula to scrape down any flour from the sides of the bowl, then whisk briefly again to ensure everything is incorporated.

Pour the batter into the prepared lined baking tin and spread the mixture evenly.

Bake the cake in the preheated oven for about 30 minutes, or until golden brown and a skewer inserted into the center comes out clean.

Once the cake is out of the oven and still warm, generously sieve icing sugar over the top.

Grate the zest of one orange and one lemon over the icing sugar-dusted cake for extra flavor and decoration.
