Bring a large pot of salted water to a rolling boil. Add the spaghetti and cook according to package directions until al dente. Before draining, reserve 1 1/2 cups of the pasta water. Drain the spaghetti and set aside.

While the pasta is cooking, peel and mince the two whole heads of garlic. This will yield a significant amount of minced garlic.

Heat a large pan over medium heat. Add the olive oil and butter. Once the butter has melted, add the minced garlic and red pepper flakes.

Cook the garlic and red pepper flakes, stirring frequently, for 1 to 2 minutes, until fragrant. Be careful not to brown or burn the garlic.

Pour in 1 cup of the reserved pasta water. Bring the sauce to a simmer and cook, stirring occasionally, until it thickens slightly, about 3 to 5 minutes. If the sauce becomes too thick, add a splash more pasta water.

Add the cooked spaghetti to the pan with the garlic sauce. Add the grated Parmesan cheese and chopped fresh parsley.

Toss all the ingredients together thoroughly using tongs, ensuring the spaghetti is well coated with the sauce, cheese, and herbs. Season with salt and black pepper to taste.

Serve immediately, garnished with additional Parmesan cheese and fresh parsley if desired.
