In a medium bowl, combine the sliced strawberries and granulated sugar. Gently toss to coat. Let the strawberries sit at room temperature for at least 15 minutes, or up to 30 minutes, to allow them to release their juices and create a delicious syrup. Stir occasionally.

While the strawberries macerate, prepare the whipped cream. In a large, chilled bowl, combine the cold heavy cream, powdered sugar, and vanilla extract. Using an electric mixer (or a whisk), beat on medium-high speed until stiff peaks form. Be careful not to overbeat.

To assemble the parfaits, take four individual parfait glasses or clear dessert cups. Start by placing a layer of cubed shortcake at the bottom of each glass. This should be about 1/4 of the shortcake cubes per glass.

Spoon a generous layer of the macerated strawberries and their juices over the shortcake cubes in each glass. Follow with a dollop of whipped cream, spreading it gently to cover the strawberries.

Repeat the layering process: add another layer of shortcake cubes, followed by more strawberries, and then another layer of whipped cream. Continue until the glasses are full, ending with a layer of whipped cream on top.

Just before serving, gently pull off small wisps of cotton candy and place them on top of the whipped cream in each parfait. Garnish with a fresh mint leaf if desired. Serve immediately to enjoy the cotton candy before it dissolves.
