Pour the McCain Home Chips into a large glass bowl. Drizzle with olive oil and sprinkle with salt (from a grinder). Toss thoroughly to coat the chips evenly.

Transfer the seasoned chips into an air fryer basket. Air fry according to package directions until golden brown and crispy.

While the chips are air frying, prepare the Toasted Spice Mix. In a dry pan, combine garlic powder, paprika, coriander powder, cumin powder, garam masala, red chilli flakes, and kasuri methi. Toast the spices over medium heat for about 1 minute, shaking the pan occasionally, until fragrant.

Once the chips are air-fried, return them to the large glass bowl. Add black pepper (from a grinder) and a generous sprinkle of the prepared Toasted Spice Mix. Add the sliced red onion, sliced red chilli, and fresh coriander to the bowl.

Toss all ingredients together until the chips are well coated with the spices and vegetables.

Prepare the Masala Mayo: In a separate small container, combine the mayonnaise, a generous sprinkle of the Toasted Spice Mix, and a touch of salt. Mix well until smooth.
