Slice 80g of pork belly into thin, even pieces. This will help it cook quickly and render its fat effectively.

Prepare the aromatics: slice 1 garlic clove, 1 piece of ginger, and 1 green onion. Have 2 dried chili peppers ready.

In a small bowl, combine all the sauce ingredients: 1 tablespoon cooking wine, 1 tablespoon soy sauce, 1/2 tablespoon dark soy sauce, 1 tablespoon oyster sauce, 1 tablespoon sugar, 1 tablespoon vinegar, 1/2 tablespoon starch, and 2 tablespoons water. Add the sliced garlic, ginger, green onion, and dried chili peppers to the pan with the pork. Stir-fry for about 30 seconds to 1 minute, until fragrant.

Add the prepared cabbage to the pan. Increase the heat to high and stir-fry for 2 minutes, tossing constantly, until the cabbage begins to soften slightly but still retains some crispness.

Give the prepared sauce mixture a quick stir to re-combine any settled starch, then pour it evenly over the cabbage and pork in the pan.

Continue to stir-fry quickly for another 1-2 minutes, tossing vigorously, until the sauce thickens and evenly coats all the ingredients. Ensure everything is well combined and heated through.

Transfer the hot stir-fried cabbage with meat to a serving plate and serve immediately, ideally with steamed rice.
