Press the 350g block of Sunrise Dessert Tofu to remove excess liquid. This can be done by placing the tofu between paper towels and pressing down gently.

In a large bowl, combine the 1 cup all-purpose flour, 1/4 cup granulated sugar, 2 teaspoons baking powder, and 1/2 teaspoon salt. Whisk these dry ingredients together until well combined.

Add 1/2 cup almond milk, 1 tablespoon vegetable oil, and the pressed tofu to the bowl with the dry ingredients. Use a fork to mash the tofu, then mix all ingredients with a spatula until combined.

Continue mixing and kneading the ingredients until a soft dough forms.

Roll out the dough on a lightly floured surface and cut it into beaver tail shapes (irregular oval shapes are ideal).

Heat oil for frying in a pan over medium-high heat. Fry the dough pieces until they are golden brown and cooked through on both sides, flipping once. Remove and place on a wire rack lined with paper towels to drain excess oil.

While the beaver tails are frying, prepare the maple butter glaze. In a small saucepan, combine 1/4 cup maple syrup, 2 tablespoons unsalted butter, and 1/2 teaspoon vanilla extract. Whisk the ingredients together and bring the mixture to a simmer over medium heat.

In a separate small pan, combine 1/2 cup chopped pecans, 1 tablespoon butter, 1 tablespoon brown sugar, and a pinch of salt. Cook this mixture over medium heat, stirring constantly, until the pecans are caramelized.

Dip each fried beaver tail into the prepared maple butter glaze, ensuring it's fully coated. Then, top the glazed beaver tails with the crunchy praline pecans.
