Preheat your oven to 375°F (190°C). Grease or line a muffin tin with paper liners.

In a large bowl, whisk together the all-purpose flour, baking powder, salt, and Italian seasoning until well combined.

In a separate medium bowl, whisk together the milk, large egg, and olive oil (or melted butter) until smooth.

Pour the wet ingredients mixture into the dry ingredients mixture. Stir gently with a spatula or spoon just until combined. Be careful not to overmix; a few lumps are okay.

Gently fold in most of the shredded mozzarella cheese and pepperoni slices into the batter. Reserve a small amount of cheese and pepperoni for topping the muffins.

Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.

Top each muffin with the remaining shredded mozzarella cheese, pepperoni, cherry tomato slices, and black olives.

Bake for 18–20 minutes, or until a toothpick inserted into the center of a muffin comes out clean and the tops are a gorgeous golden brown.

Let the pizza muffins cool slightly in the muffin tin before transferring them to a wire rack. Top each muffin with a fresh basil leaf before serving. Enjoy the cheesy goodness!
