Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper.

Melt the unsalted butter and chocolate chips (or chopped chocolate) together in a heatproof bowl until smooth. You can do this in a microwave in 30-second intervals, stirring in between, or over a double boiler.

Whisk the cocoa powder into the melted butter and chocolate mixture until well combined. Set aside to cool slightly.

In a separate large bowl, beat the large eggs and granulated sugar together using an electric mixer until the mixture is creamy, pale, and fluffy.

Add the vanilla extract to the egg and sugar mixture, then pour in the slightly cooled chocolate mixture and mix until just combined.

Fold in the all-purpose flour and salt into the batter just until incorporated. Be careful not to overmix.

Gently fold in the roughly chopped Oreo cookies into the brownie batter.

Arrange graham crackers in an even layer across the bottom of the prepared 8x8-inch baking pan.

Pour the brownie batter evenly over the graham cracker layer in the pan and spread it out with a spatula.

Bake for 25 minutes in the preheated oven.

Remove the pan from the oven. Evenly cover the top of the partially baked brownies with marshmallows.

Change the oven setting to broil. Broil the brownies for 1–2 minutes, watching carefully, until the marshmallows are golden brown and slightly toasted. Do not walk away, as marshmallows can burn quickly.

Remove from the oven and immediately finish with additional chopped Oreos, chocolate pieces, and graham cracker chunks for extra s'mores flavor and texture.

Let the brownies cool completely before slicing and serving. This allows them to set properly.
