Preheat your oven to 350°F (175°C).

Place the 8-ounce block of pepper jack cheese in the center of a cast iron skillet.

Add the drained can of diced tomatoes with green chiles (Rotel) to one side of the skillet, next to the pepper jack cheese.

Add the 8-ounce block of Colby jack cheese to another side of the skillet.

Distribute the pieces of cream cheese into the skillet, placing them in open spots around the other ingredients.

Add the can of diced green chiles (undrained) to the skillet.

In a separate bowl, combine the cooked and crumbled ground beef with the taco seasoning. Mix well until the beef is evenly coated.

Distribute the seasoned ground beef into the skillet, filling the spaces around the cheese and other ingredients.

Carefully place the skillet into the preheated oven. Bake for 20-25 minutes, or until the cheeses are completely melted and bubbling, and all ingredients are heated through.

Remove the skillet from the oven. Using a spatula or sturdy spoon, thoroughly stir all the ingredients together in the skillet until well combined and smooth.

Serve the cheese dip warm directly from the cast iron skillet with tortilla chips.
