Pour the 1 packet of gelatin (~7g) into a container, such as a measuring cup.

Add the 2 1/2 tablespoons of sugar into the same container with the gelatin.

Pour the 250 ml of hot Thai tea into the container containing the dry ingredients (gelatin and sugar).

Stir the mixture with a spoon until the dry ingredients are evenly combined and there are no lumps.

Add the 100 ml of cold half and half into the mixture.

Stir the mixture again until all ingredients are fully combined.

Pour the liquid mixture into individual serving containers.

Place the containers in the fridge for at least 2 hours to allow the jelly to set.

Once the Thai Tea jelly is set, it can be enjoyed. Optionally, add sweet cream on top before serving.
