Preheat your oven to 350°F. Line a cake tin with parchment paper, ensuring both the bottom and sides are covered.

In a large mixing bowl, combine the black sesame butter or paste, maple syrup, eggs, vanilla extract (if using), sea salt, and baking soda.

Whisk all the ingredients together until a smooth, thick, and uniformly black batter is formed. Make sure there are no lumps.

Pour the black sesame batter into the prepared parchment-lined cake tin. Use a spatula to scrape all the batter from the mixing bowl and spread it evenly in the tin.

Bake the cake in the preheated oven for about 35 minutes, or until a toothpick inserted into the center comes out clean.

Once baked, remove the cake from the oven and let it cool completely in the tin on a wire rack. This will take approximately 30 minutes.

Once the cake is completely cooled, spread a layer of the gelatin-free marshmallow fluff evenly over the top of the cake using a spoon or spatula.

Carefully use a butane torch to brown the surface of the marshmallow fluff, creating a toasted, decorative finish. Be mindful not to burn it.

Slice and serve your flourless black sesame cake.
