Preheat your oven to 400°F. Ensure your chicken breasts are prepared (thin-cut is recommended for faster cooking).

Place the chicken breasts in a 9x13-inch baking dish. Season both sides of the chicken evenly with the 1/2 teaspoon of salt, 1/2 teaspoon of black pepper, and 1 teaspoon of garlic powder.

In a small bowl, whisk together all of the sauce ingredients: chicken broth, Dijon mustard, honey, olive oil, minced garlic, onion powder, paprika, and dried thyme until the mixture is smooth and well combined. Pour most of this sauce over the seasoned chicken, reserving about 1/4 cup for later. Ensure the chicken is evenly coated with the sauce.

Cover the baking dish tightly with aluminum foil. Bake in the preheated oven for 20-25 minutes for thin-cut chicken breasts, or 30-40 minutes for regular or thick chicken breasts (or thighs).

Approximately 10-15 minutes before the chicken is expected to be done, carefully remove the baking dish from the oven. Add your chosen vegetables (asparagus, green beans, or broccoli) around the chicken in the dish. Drizzle the reserved 1/4 cup of sauce over the vegetables.

Return the baking dish to the oven, uncovered, and continue to bake for the remaining 10-15 minutes, or until the vegetables are tender-crisp and the chicken reaches an internal temperature of 165°F. Use a meat thermometer to ensure proper doneness.

Remove from the oven and let rest for a few minutes before serving. This dish pairs wonderfully with roasted potatoes, rice, or your favorite side. Enjoy your easy and flavorful dinner!
