Chop the chicken breasts into bite-sized chunks and place them in a large bowl. Drizzle with 1 tablespoon of olive oil and season with half of the gyros seasoning sachet. Stir well until all chicken pieces are evenly coated. Thread the seasoned chicken onto 4 skewers.

Place the chicken skewers in the air fryer and cook at 185°C (365°F) for 20 minutes, or until cooked through and lightly browned.

While the chicken cooks, chop the potatoes into chunks. Place them in the air fryer basket, drizzle with olive oil, and season generously with chicken seasoning. Toss to ensure they are fully coated. In a small saucepan, melt the butter over low heat. Add the minced garlic, chopped fresh parsley, and 1 tablespoon of gyros seasoning. Stir continuously until the butter is fully melted and the ingredients are well combined. Keep warm.

Prepare the tzatziki: In a small bowl, combine the Greek yoghurt, grated cucumber, dried mint, and garlic granules. Mix thoroughly and set aside.

Prepare the salad: In another bowl, combine the chopped tomatoes, chopped cucumber, and thinly sliced red onion. Dress with lime juice and chopped fresh parsley. Toss gently to combine.

Just before the chicken and potatoes are finished cooking, pan-fry or grill the halloumi until golden brown on both sides. Lightly toast the Greek flatbread in a pan or the air fryer for a minute or two until warm and slightly crispy.

Once the halloumi and flatbread are cooked, brush them generously with the prepared garlic butter.

Assemble the bowls: Divide the cooked chicken gyros skewers, seasoned potatoes, garlic butter halloumi, tzatziki, and fresh salad among 4 serving bowls. Drizzle any remaining garlic butter over the chicken gyros kebabs. Garnish with extra fresh parsley before serving.
