Preheat your oven to 200°C.

Wash the 2 large potatoes thoroughly. Cut the potatoes into roughly 1-inch cubes.

Place the potato cubes into a large mixing bowl. Add 1 tablespoon of olive oil, 1/2 teaspoon of smoked paprika, 1/4 teaspoon of salt, and 1/8 teaspoon of black pepper. Toss all ingredients together until the potato cubes are evenly coated.

Spread the seasoned potatoes in a single layer onto a baking tray lined with parchment paper. Place the tray into the preheated oven and roast for 20 minutes.

While the potatoes are roasting, take the 500 grams of chicken breast and cut it into 1-inch pieces.

In a separate mixing bowl, add the cut chicken pieces. Add 1 tablespoon of olive oil, 1 tablespoon of chipotle paste, 1/2 teaspoon of smoked paprika, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, 1/4 teaspoon of salt, and 1/8 teaspoon of black pepper. Mix all ingredients thoroughly until every piece of chicken is well coated with the seasoning.

After the initial 20 minutes of roasting, carefully remove the baking tray with the potatoes from the oven. Add the seasoned chicken pieces to the same baking tray, making sure to distribute them in a single layer alongside the potatoes to ensure even cooking.

Return the baking tray to the oven and continue to cook for an additional 15-20 minutes, or until the chicken is fully cooked through and the potatoes are golden brown and tender.

While the chicken and potatoes are finishing in the oven, prepare the fresh garnishes. Chop 1/4 cup of fresh coriander, finely dice 1/2 small red onion, and dice 1 medium avocado.

Once the chicken and potatoes are cooked, remove the tray from the oven. Squeeze the juice from 1/2 a lime directly over the entire chicken and potato mixture on the tray.

Divide the chipotle chicken and potato mixture evenly into individual serving bowls. Top each bowl generously with the fresh chopped coriander, diced red onion, and diced avocado. Finish with a dollop of 2 tablespoons of Greek yogurt on top.
