Cut the 1 pound of chicken thighs into bite-sized pieces. Set aside in a medium-sized bowl.

Finely mince the 2 to 3 stalks of fresh lemongrass and 5 to 6 cloves of garlic.

Add the minced lemongrass and minced garlic to the bowl with the chicken thighs. Then, add the fish sauce, sugar, black pepper, chicken bouillon powder, garlic powder, and onion powder. Mix all ingredients thoroughly until the chicken pieces are well coated with the marinade.

Heat 1 tablespoon of oil in a large pan or wok over medium-high heat. Once the oil is hot and shimmering, add the marinated chicken to the pan in a single layer if possible. Cook for 5-7 minutes, stirring occasionally, until the chicken is golden brown on the outside and cooked through.

Add 1 tablespoon of oyster sauce to the cooked chicken in the pan. Stir well to ensure the sauce is evenly distributed and coats all the chicken pieces.

Serve the Vietnamese lemongrass chicken immediately. It is highly recommended to serve it alongside steamed rice and a fried egg for a complete and satisfying meal.
