Preheat your oven to 200°F. Line two large baking sheets with parchment paper to prevent sticking.

In a large bowl, combine the granulated sugar, ground cinnamon, and salt. Whisk briefly to ensure the spices are evenly distributed.

Add the thinly sliced apples to the bowl with the cinnamon sugar mixture. Toss gently with your hands or a spatula until all apple slices are evenly coated.

Arrange the apple slices in a single layer on the prepared baking sheets. Ensure there is no overlapping, as this will prevent them from crisping properly. You may need to use more than two baking sheets depending on the size of your apples.

Bake for 1 hour. After 1 hour, carefully flip each apple slice. Continue baking for another 30 minutes to 1 hour, or until the chips are dry, slightly curled at the edges, and crisp. The exact baking time will depend on the thickness of your apple slices and your oven.

Once the apple chips are crisp, turn off the oven. Leave the apple chips inside with the oven door slightly ajar for an additional 15-30 minutes. This allows them to cool down slowly and become even crispier.

Remove the apple chips from the oven and transfer them to a wire rack to cool completely. They will continue to crisp as they cool. Store in an airtight container at room temperature for up to 1 week.
