Wash and trim the green beans. Cut them into even 3-inch pieces.

In a large pot or Dutch oven, heat the neutral oil to 375°F. Use a deep-fry thermometer to monitor the temperature. While the oil is heating, prepare a plate lined with paper towels for draining the fried green beans.

Working in batches, carefully add a handful of green beans to the hot oil. Fry for 1 minute per batch, ensuring the oil temperature does not drop below 325°F. Remove the fried green beans with a slotted spoon and transfer them to the paper towel-lined plate to drain. Repeat with the remaining green beans.

Once all the green beans are fried, carefully pour out most of the oil from the pot, reserving 2 tablespoons of the oil in the pot. Place the pot back on the stove over low heat.

Add the finely minced garlic to the reserved oil in the pot. Sauté the garlic gently for 1-2 minutes, until fragrant and lightly golden, being careful not to burn it.

Add the fried green beans back into the pot with the sautéed garlic. Toss to combine the beans and garlic thoroughly.

Season with salt, white pepper, and MSG (if using) to taste. Toss again to ensure the seasonings are evenly distributed. Serve immediately.
