In a bowl, combine the peanut butter, vanilla protein powder, and 2-3 tablespoons of honey. Mix these ingredients together with a spoon until well combined and a cohesive dough forms.

Fold in the 1/4 cup of dark chocolate chips into the cookie dough mixture until evenly distributed.

Divide the cookie dough evenly between 6 molds of a muffin pan. Press the cookie dough firmly into the bottom of each muffin mold to form a compact base.

In a separate microwave-safe bowl, combine the 1/2 cup of dark chocolate chips or melts and the 1 teaspoon of coconut oil.

Melt the chocolate mixture in the microwave. Stir the mixture at every 15 seconds, keeping a close eye on it, until fully melted and smooth. This should take approximately 1-2 minutes.

Evenly pour the melted chocolate over the cookie dough bases in the muffin pan. Use the back of a spoon to gently spread the chocolate evenly across the top of each cookie dough portion.

Place the muffin pan into the freezer for 30 minutes, or until the chocolate topping is completely set.

Once set, carefully remove the bites from the muffin pan. Transfer them to an airtight container and store them in the fridge. They are now ready to be enjoyed as a grab-and-go snack!
