Crack 2 large eggs into a small bowl. Add a pinch of salt and a pinch of black pepper. Whisk the eggs thoroughly until well combined and slightly frothy.

Place a non-stick pan over medium-low heat. Add about 1/2 tablespoon of butter to the pan and allow it to melt and coat the bottom.

Once the butter is melted, pour the whisked eggs into the pan, spreading them out to form a thin, even omelette shape. Immediately place 2 slices of bread side-by-side directly onto the liquid egg in the pan, pressing down gently to ensure the bread adheres to the egg.

Once the egg is mostly cooked and set around the bread (about 1-2 minutes), carefully flip the entire omelette with the bread attached over to cook the bread side. This will allow the bread to toast slightly.

Place 1 slice of cheese on top of one of the bread slices. Place 2 slices of mortadella on top of the other bread slice.

Fold the omelette: first, fold the side of the egg without toppings over the cheese. Then, fold the mortadella-topped bread slice over the folded egg and cheese, forming a sandwich. Gently press down on the sandwich with a spatula to ensure everything is warmed through and combined.

Remove the sandwich from the pan and slice it in half. Serve immediately.
