Add the butter to the dry ingredients. Using your fingertips or a pastry blender, work the butter into the flour mixture until it resembles coarse crumbs.

Roll each portion into a smooth ball, then gently flatten it slightly with the palm of your hand.

Arrange the flattened dough balls on a clean surface and cover them with a clean kitchen towel. Allow them to rest for at least 15 minutes, or up to 1 hour. This resting period helps the gluten relax, making the dough easier to roll.

Lightly flour your work surface and a rolling pin. Take one dough ball and roll it out into a thin, approximately 6-8 inch diameter circle. Repeat with the remaining dough balls, stacking them with parchment paper in between if desired to prevent sticking.

Heat a cast-iron skillet or heavy-bottomed pan over medium-high heat. Do not add any oil. Once hot, place one tortilla in the pan.

Cook for about 30-60 seconds per side, or until golden brown spots appear and the tortilla puffs up slightly. Flip and cook the other side. Transfer the cooked tortilla to a plate and cover with a clean kitchen towel to keep warm and soft while you cook the remaining tortillas.
