Heat the avocado oil in a donabe or large pot over medium heat.

Add the minced garlic, grated ginger, gochugaru, gochujang, and mayo to the pot.

Stir until a thick, smooth sauce forms.

Add the green onions, shiitake mushrooms, daikon, baby bok choy, and salmon chunks to the pot.

Pour in the soy milk.

Place the ramen noodles on top of the other ingredients.

Cover the pot and cook over medium heat for 10-15 minutes, or until the noodles are tender, the salmon is cooked through, and the daikon has softened.

Season with sea salt to taste as it cooks.
