In a large bowl, combine the ground pork, 1 tablespoon of fish sauce, 1 tablespoon of oyster sauce, 1 tablespoon of sugar, 1 teaspoon of black pepper, 2-3 cloves of minced garlic, 1/2 a minced shallot, 1/4 cup of chopped green onion, 1 tablespoon of corn starch, and 1 tablespoon of oil. Mix all ingredients thoroughly by hand until well combined.

Form the pork mixture into small, flattened patties, about 1/2 inch thick.

In a separate bowl, place the thinly sliced pork belly. Add 1 tablespoon of fish sauce, 1 tablespoon of oyster sauce, 1 tablespoon of sugar, 1 teaspoon of black pepper, 2-3 cloves of minced garlic, 1/2 a minced shallot, and 1 tablespoon of oil. Mix all ingredients thoroughly by hand, ensuring the pork belly slices are evenly coated.

Preheat a grill to medium-high heat.

Place the prepared pork patties and sliced pork belly directly on the preheated grill. Grill both the patties and the pork belly until they are cooked through and have developed a nice char, flipping as needed to ensure even cooking. This will take approximately 10-15 minutes.

While the pork is grilling, prepare the Nuoc Cham. In a bowl, combine 1 1/2 cups of hot water, 1/2 cup of sugar, 1/4 cup of fish sauce, and 2 tablespoons of white vinegar. Stir the mixture until the sugar has completely dissolved.

Add 1-2 tablespoons of minced garlic and 1-2 tablespoons of minced bird's eye chili to the Nuoc Cham. Stir in 1/2 a shredded carrot. Taste the sauce and adjust the seasonings (sweet, sour, salty, spicy) to your preference.

Prepare individual serving bowls by placing a portion of cooked vermicelli noodles at the bottom. Arrange fresh lettuce and a variety of fresh herbs (such as mint, cilantro, and perilla) around the noodles.

Place the freshly grilled pork patties and pork belly on top of the noodles and greens. Pour a generous amount of the prepared Nuoc Cham dipping sauce over the entire bowl.

Serve immediately and enjoy your delicious Bún Chả!
