Prepare the carrots: Peel the carrots. If using larger carrots, cut them into approximately 2-inch pieces, or slice them diagonally into 1/2-inch thick rounds. If using baby carrots, trim the ends.

Glaze (Optional): Once the carrots are tender, remove the lid. If desired, stir in the 1 teaspoon of honey or maple syrup. Increase the heat to medium-high and cook, stirring occasionally, until most of the liquid has evaporated and reduced to a light glaze coating the carrots. This should take about 5 to 7 minutes.
