Heat olive oil in a large pot over medium heat. Add chopped onion, minced garlic, and minced ginger. Sauté for 5-7 minutes, or until fragrant and softened.

Pour vegetable broth, soy sauce, and dark soy sauce into the pot. Bring the soup base to a simmer.

While the soup base is simmering, prepare the wonton meatballs. In a large mixing bowl, combine ground pork, egg, chopped green onions, ginger paste, garlic paste, black pepper, soy sauce, and sesame oil. Mix thoroughly until all ingredients are well combined.

Once the soup base is simmering, take small portions of the meat mixture (about 1 tablespoon each) and form them into small meatballs. Carefully drop the meatballs into the simmering broth.

Add the chopped bok choy and cut wonton wrappers to the soup. Stir all the ingredients in the pot to combine them. Continue to simmer for 8-10 minutes, or until meatballs are cooked through and bok choy is tender.

Season with salt to taste. Squeeze in fresh lime juice from the lime.

Ladle the hot soup with meatballs, bok choy, and wonton wrappers into serving bowls. Garnish each serving with a generous spoonful of chili oil and a sprinkle of chopped green onions.
