Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

In a large mixing bowl, combine the all-purpose flour, cottage cheese, and baking powder.

Add about half of the shredded cheddar cheese and half of the chopped jalapeño to the bowl. Reserve the remaining cheese and jalapeño for topping.

Mix all the ingredients together until a cohesive dough forms. You may need to use your hands to bring it together.

Lightly dust a clean counter surface with a small amount of flour. Transfer the dough to the floured surface and knead it briefly for about 1 minute until smooth.

Using a bench scraper or a knife, divide the dough into 4 equal pieces.

Take each piece of dough and roll it into a smooth ball. Then, use your thumb or a finger to create a hole in the center of each dough ball, gently stretching it to form a bagel shape.

Place the formed bagels on the prepared baking sheet.

In a small bowl, crack the egg and whisk it well to create an egg wash.

Brush the top and sides of each bagel generously with the egg wash.

Sprinkle everything bagel seasoning over the top of each bagel. Then, top with the remaining shredded cheddar cheese and chopped jalapeño.

Bake the bagels in the preheated oven for approximately 30 minutes, or until they are golden brown and cooked through.

Once baked, remove the bagels from the oven and let them cool slightly on the baking sheet before serving.
