Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped yellow onion and cook until softened, about 5 minutes.

Stir in minced garlic and grated fresh ginger. Cook for 1 minute until fragrant, being careful not to burn the garlic.

Add tomato paste and cook for 2 minutes, stirring constantly, to deepen its flavor. Pour in the canned diced tomatoes (undrained) and vegetable broth. Stir in dried oregano, bay leaf, salt, and black pepper. Bring the mixture to a gentle simmer.

Add the rinsed and drained butter beans, kidney beans, and chickpeas to the pot. Stir in the uncooked penne pasta. Continue to simmer, stirring occasionally, for 10-12 minutes, or until the pasta is almost al dente.

Stir in the instant brown rice. Continue to cook for another 5-7 minutes, or until the rice is tender and the stew has thickened to your desired consistency. Remove the bay leaf.

Remove the pot from heat and stir in the butter until melted and fully incorporated. Taste and adjust seasoning as needed.
